Reheat your oven to 190°C (170°C for fan-assisted/gas mark 5). This lets you make Tarte Tatin. With 375g puff pastry, roll out to 1/2 inch thick and 25cm wide on a floured board. Put it in the fridge to cool. Melt 165g caster sugar in a 23cm ovenproof frying pan or cake tin over medium-low heat, rotating occasionally, until golden caramel.
Whisk in 50 grams of unsalted butter after removing from heat. Put eight peeled, cored, and quartered Cox’s apples in caramel. After that, sprinkle a teaspoon of ground cinnamon and cover with pastry. Let the brown cool for 5 minutes after baking for 40 minutes. For a classic French dessert, invert it on a serving plate and serve warm with cream or crème fraîche.
